Ingredients
- 2-4 kilo chicken cut into serving pieces
- 3/4 cup vinegar
- 1/4 cup soy sauce
- 1/2 cup thinly sliced onion
- 4-6 cloves crushed garlic
- 1-2 pieces bay leaf
- 5-7 peppercorns
- 1 tsp salt
- 1 cup water
- 1/4 oil
Steps
- Combine the chicken pieces, vinegar, soy sauce, onion, garlic, bay leaf, peppercorns and salt to a large bowl and refrigerate for 1-4 hours to marinate.
- Heat up some cooking oil in a pan. Place the chicken and its marinade in a large pot. Add the water and bring to a boil over medium-high heat.
- Let it simmer for around 15 minutes. Put some soy sauce and let it simmer again for roughly around 15 minutes. Mix it from time to time.
- Add some vinegar. Cover it and don’t stir. Let it boil.
- Simmer it until you reach desired consistency of the sauce. We like the sauce thick so I would simmer it for roughly 15 more minutes on low to medium heat.
Your Adobong Manok is already done. Serve it with rice. Enjoy.
