Ingredients
- 1 kilo of beef (round or sirloin cut) cut into cubes, beef tripe or oxtail (cut 2 inch long)
- 3 1/4 cups of peanut butter
- 1/4 cup grounded toasted rice
- 1/2 cup cooked bagoong alamang (anchovies)
- 3 pieces onions, diced
- 3 heads of garlic, minced
- 4 tablespoons atsuete oil
- 5 pieces eggplant,1 inch thick
- 2 cups of Pechay (Bok choy) cut into pieces
- 2 cups of sitaw (string beans) cut into pieces
- 1 banana bud, 1 inch thick
- 1/2 cup oil
- 8 cups of water
- Salt
Instructions
- Boil beef, tripe and oxtails in water until cooked in a stock pot. Strain and keep it stock.
- Heat oil and atsuete oil in a big pan.
- Sauté garlic, onions until golden brown, then add the stock, toasted rice and peanut butter. Boil and simmer for 20 minutes. Salt to taste.
- Then add the string beans, eggplant,pechay and banana bud. Cook the vegetables. Do not overcook the vegetables.
- Serve with bagoong and hot plain rice.
